Kale & Calcium: Who knew?

Did you know that you will absorb more calcium from eating kale than you will from drinking milk? Kale is one of the healthiest foods you can eat, it's loaded with so many nutrients such as vitamins A, C and K, iron, magnesium, chlorophyll and fiber. This super-food promotes regular digestion, lowers blood sugar, curbs overeating, contains antioxidants shown to fight against the formation of cancerous cells, aids to fight against excessive inflammatory-related problems, such as arthritis, autoimmune disorders, and asthma.
So, what are you waiting for? Go out and get yourself some kale today!
One of my favorite ways to enjoy this nutrient dense food is kale chips. Try this simple recipe: Heat oven to 350, arrange one bunch of kale leaves with the stems removed on two rimmed baking sheets in a single layer. Drizzle kale leaves with 2 tablespoons of extra virgin olive oil, season with sea salt and toss together. Bake until crispy, rotating the trays once, about 12 minutes total. Toss with lemon zest from 1 lemon. Enjoy : )
